Our kimchi is naturally fermented the slow way — napa cabbage and vegetables cured with chili, garlic, and ginger until they develop a deep, tangy character. It's Anisa's Foods' first step beyond achaar, made with the same attention to ingredients and patience that goes into every jar we produce.
Fresh cabbage is salted and rested before being coated in a chili-garlic-ginger paste and packed for fermentation. Left to develop naturally over several days, the result is a pickle with real depth — sour, savory, and gently spicy, with the distinctive tang that only slow fermentation produces.
Kimchi is endlessly versatile — eat it straight as a side, fold it into fried rice, stir it through noodles, or use it to add a tangy kick to a sandwich or momo. As fermentation continues in the jar, the flavor will deepen and grow more sour over time, so taste as it ages and find your favorite stage.
Refrigerate after opening. Fermented foods continue to develop flavor in the fridge over time, so don't worry if it tastes different a week or two after opening — that's the fermentation still doing its work.
